What makes a focaccia sandwich different?

It’s the bread. Focaccia is a flat Italian loaf baked in a pan with plenty of olive oil, so the bottom crisps up while the inside stays soft and open. That makes it sturdy enough for stracciatella, pesto and a proper stack of cured meat.

We bake our focaccia here in Scarborough and build every sandwich on it, small or large. Expect Italian cured meats, fresh cheese and a sauce or two.

The dough starts with Penelope, the sourdough starter Vince Stalteri made in 2018 and nearly lost. Read how Penelope started.

A focacceria inside the bakehouse

We’re an Italian bakery first. The ovens that bake all the sourdough for Penelope Social, our sister restaurant in Woodbridge, also bake the focaccia your sandwich comes on. Every loaf is naturally fermented and baked fresh daily.

You can take focaccia home too. Semolina is $9 small or $15 large, and Barese is $12 or $20. Both sit on the bakery shelf beside our sourdough loaves.
